Do you ever just NEED that something sweet?
As a kid, after dinner every night my dad would let us have dessert. My dad wasn’t trying to be the “cool” parent, he just always wanted dessert after dinner and allowed us to partake in his nightly ritual. He liked to claim it was his cigarette (he doesn’t smoke btw).
Now I am programed to want sweets after dinner. I never want to deprive myself of life simple pleasures, however I want to be healthy and be in control of my diet, that is where the recipe for these pumpkin shakeology balls came from: my desire for sweets and my mission to stay healthy.
- 2 tbs. drippy almond butter
- 2 tbs vanilla shakeology
- 1 tbs. organic canned pumpkin
- 3 tbs. oats
- 2 tbs. shredded, unsweetened coconut
- 2 tbs. real maple syrup or honey
- 1 tsp vanilla extract
- 1/4 tsp of pumpkin pie spice
- sprinkle of sea salt
- 2 tbs dark chocolate chips
Combine all of the ingredients, except the chocolate chips, in a a blender. Pulse 3-5 times until mixed up but still chunky and thick. Add in the chocolate chips, pulse again. Roll into small balls and refrigerator for 2 hours. Enjoy!
You get the pleasure of chocolate, the nutrition of shakeology, the healthy fat from the almond butter, and the fiber from the oats. A winning combo!
