I have been in LOVE with pancakes lately! I don’t know if its the chill in the air or the sense of comfort one gets from a pancake, I just know they are delicious and I want all of them!
Since I am currently completing Core De Force, my pancake recipe has to be compliant with the eating guidelines. These pumpkin pancakes are packed with protein and flavor!
- 2 eggs
- 1 tbs coconut flour
- 1 tbs organic canned pumpkin
- 1 tsp vanilla extract
- 1/4 tsp pumpkin pie spice, more if desired
- sprinkle of pink sea salt
Whisk all the ingredients in a bowl.
Heat a nonstick stick pan over medium-low heat. Sprayed the pan with coconut oil cooking spray. Add 2 tbs of batter to the pan, wait until you see bubbles appear on the surface of the pancake, flip, wait a few minutes for the other side to get cooked and enjoy!
I had my pancakes with a tsp of 100% real maple syrup and some crushed pecans!
