So life happened last week and I wasn’t able to commit to my 21 Day Fix Extreme eating plan. 3 Days in row I was invited to events involving wine. My poor husband has had to be in charge of the baby’s evening routine and he has been killing it, although the house isn’t as clean as when I’m home.
This week I will be doing a combination of Core De Force and Hammer and Chisel. I have done Hammer and Chisel and few times this week and already feel a difference! Super sore!
This week I am focusing on my comfort foods. The food that makes me feel good when I eat it. I hope you enjoy and feel the love in eat bite!
Breakfast burrito, throw anything you want in a skillet with eggs and wrap it in a burrito 🙂
Pumpkin Oatmeal with banana and pecans, egg whites with spinach -> this may seem like a lot of food and a lot of containers to start your day with but for me I need it! If I just have a protein or if I just have a carb I am messed up all day. Also something I have been playing around with is intermittent fasting. I will stop eating at 7pm and not eat till 8am, giving my body a break from food for 13 hours. It helps me to not pick at night which is super helpful

Chicken with marinated kale salad
- 1/4 cup EVOO
- 1 clove garlic
- 1 tsp maple syrup
- 1 tsp dijon mustard
- 1 tsp. Fresh thyme
Mix all together top over 3 cups of kale, add apples, and assorted veggies.

“Spaghetti” with Meatballs
-1 roasted spagetti squash, scoop out the spaghetti with a fork. If you don’t know how to cook it, check this out https://www.youtube.com/watch?v=-NHtEsopf18
- 1 lb ground turkey meat
- 1-2 turkey sausages, taken out of there casein
- 1 tsp pink sea salt
- 1/2 tsp pepper
- 1/2 tsp oregano or Italian seasoning
- 1 egg
- 3/4 cup oats, pulse in a blender to make them a little smaller
- 2 cloves of minced garlic
- 1 tbs. freshly chopped parsley
Preheat oven to 400. Combine all the ingredients in a bowl, mix well BUT do not over mix. Roll into a ball, place on a cookie sheet lined with parchment paper. Bake for 15-20 minutes.
Enjoy with your favorite homemade red sauce. If you buy your sauce, please use a good quality one with under 5 ingredients.
1 red, 1 1/2 green, 1/4 yellow
Turkey Lettuce Wraps
- 1 lb ground turkey
- salt and pepper
- 1 small onion, diced
- 2 cloves of garlic
- 1 tsp minced ginger
- 1/2 cup chopped butten mushrooms
- 1 zucchini, chopped finely
- 1 bell pepper, finely chopped
Spray pan with cooking spray, over medium high heat brown turkey, season with salt and pepper. Remove from skillet after browned (about 5 minutes, stirring every now and then). Add onion, once transluent, about 2 minutes add garlic and ginger. Stir, then add mushrooms, zucchini, and pepper. Season with more salt and pepper and add the meat back in for a few minutes to allow all the seasoning to come together.
- 1/4 cup coconut amnios or soy sauce
- 1 Tbs. sesame oil
- 2 tsp. honey
- 1 glove garlic minced
- 1 tsp. ginger, minced
- 1 fresh lime
- 1 tbs. cilantro, minced
Combine in a bowl and mix.
Serve with rice and lettuce cups and enjoy!
