This week I was super inspired by one of my favorite cookbooks, Giada’s Feel Good Food. I absolutely love Giada De Laurentiis, she inspired me to get into cooking, where I found a passion for making food light and tasty.
After we moved, I put all of my cookbooks away in a closet and haven’t taken them out since. I recently discovered them when Sammy discovered some of her toys I had hid away, and decided to take a look. This particular book is recipes Giada herself eats every day, they are light, healthy, and fresh. This months menu is based off of her recipes.
Egg, Kale, and tomato breakfast wrap. This colorful wrap is full of fresh veggies, packed with protein and healthy fat to keep you full and energized for your day.
Chia seed pudding. This no cook treat tastes almost like pudding. Its full of protein and healthy fat and low in carbs!
My usual: oats with berries and egg whites with spinach
I love to make a big batch of lunch type food in the beginning of the week and eat it when we don’t have enough dinner for leftovers the next day. The Chicken Chopped Salad in butter lettuce cups is super flavorful, a great way to spice up boring chicken.
California Turkey Chili. I absolutely love chili, I like it to be light, made with turkey, and filled with veggies, defiantly not traditional. Baked Salmon with arugula salsa verde. I am obsessed with salmon, if I’m at a restaurant you can bet I’m getting salmon. This salmon is peppery from the arugula and light thanks to the lemon. Whole Wheat linguine with shrimp, asparagus, and cherry tomatoes. My daughter is obsessed with shrimp, she can take or leave the pasta but shrimp is her go-to! I just got my chocolate replenished! I am in love with the plain chocolate, I was a chocolate vegan lover but I have made the switch! I will be blending mine up with spinach, banana, cinnamon, almond milk, and ice.
