We are justing finishing up a week’s worth of crockpot fun in the 10/10 Crockpot Challenge! Because of life I was not able to crock-pot every night. Some of the recipes from the group where talked about so much, I figured I needed to try them and they will be incorporated into this weeks meals.

Pumpkin Oats with egg whites and berries, see previous meal plan for recipe
Mash 1 small ripe banana with 1 egg. Sear in a pan with coconut oil, flip. Top with cinnamon and serve with maple syrup.
Banana Oat Pancakes from Fixate
Here is what you need:
- 1 cup unsweetened almond milk
- 2 large eggs
- 1 large ripe banana
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1/2 tsp cinnamon
- 1 dash sea salt
- 2 cups old fashion oats
- 1/2 tsp coconut oil
- 3 cups mixed berries
-Place almond milk, eggs, banana, vanilla, baking powder, cinnamon, salt, and oats in a blender until smooth.
-Heat oil in a non-stick pan on low heat
-Pour 1/4 cup of batter in skillet, cooke 2-3 minutes, then flip. Continue until batter is gone. Serve with berries
2 pancakes each, 1 yellow, 1/2 purple
Leftovers! I these recipes make a ton! Especially when you purposely double them. As a busy mom I LOVE that I do not have to cook lunch every single day, its so nice just to heat it up and go on my way.
Mexican Taco Meat from Fixate
I love this recipe so much, I double it and eat and eat it all week long for lunch. I like to serve mine on top of zoodles. Note the recipe provided is not doubled
Here is what you need:
- 1 tsp EVOO
- 1 medium onion, chopped
- 1 jalapeno, seeded and finely chopped
- 2 cloves of crushed garlic
- 1 lb. raw 93% lean turkey breast
- 1 tsp. chili powder
- 1 tsp dried oregano
- 1/2 tsp pink salt
- 1 cup all natural tomato sauce
- 1 chipolte in adobo
- 1 tbs of sauce from chipotle in adobo
-Heat oil in a skillet over medium heat
-Add onion, jalapeno, and garlic, stirring frequently for 4-5 minutes. Transfer to a bowl and set aside
-Add turkey to the same skillet, cook over medium, stirring to breakup chunks 8-10 minutes. Season with chili powder, oregano, and salt
-Add onion mixture, tomato sauce, chipotle. Reduce to a simmer until thickened, 8-10 minutes

We are going camping this weekend with a bunch of our friends. To contribute to the meals we are making a huge pulled pork. Since pork butt is super fatty I am using a lean pork loin. Its not your normal pork loin, its about 5 lbs and super thick. Everyone on the trip is super health conscience so I’m sure the dish will be appreciated.

Popcorn, I buy the organic unsalted, non-butter brand that I can pop myself. I know it sounds boring BUT after you pop it spray it with coconut oil or evoo spray and top it with sea salt and garlic powder. It makes a amazing low-calorie treat. Remember 3 cups of popcorn is 1 yellow
1/2 cup Haleo Top Ice cream. It is only 240 calories for the whole pint! It tastes amazing, when you need a little treat because you have been working hard, I highly recommend this.
