I LOVE to make roasted chic peas. They are a crunchy, healthy snack that I can feel good about. Stores sell the already roasted chic peas in the snack isle however they are super expensive and full of sodium. I like to do different variations with spices and garlic but today I came up with a amazing sweet version of this typically salty snack, kettle-corn chic peas!!! My family could not stop snacking on them!! Much healthier than typical kettle corn, I always like to make my own food so I can control how much sugar and salt is in it.
Kettle-Corn Chic Peas:
- 1 can organic chic peas, drained, rinsed, and patted dry
- 1/2 tbs. maple syrup
- 1/2 packet stevia
- Generous sprinkle of cinnamon or pumpkin pie spice
- Generous sprinkle of pink himaylian sea salt
- 2 tsp. coconut oil
Mix all the ingredients together, roast in a oven at 400 degrees for 15-20 minutes, shaking every 5 minutes. Let cook and enjoy!
