I LOVE sushi. Its so clean and light. It makes me feel like I am doing something good for my body every time I enjoy it. I always try to stick to the un-fried, un-sauced rolls, or just plain sashimi.
My husband has a really hard time going to restaurants due to his brain injury, he gets confused and wants to leave. There are only a few restaurants we can go to that he will not freak out at, Sushi is not one of them.
I first saw this recipe while watching the FIXATE cooking show on Beachbody on Demand and I knew we HAD to try it. It was one recipe with all of my favorite things in it: avocado, tuna, and quinoa.
I made it the other night and it was a huge hit! The quinoa didn’t really stay stuck together so next time I will probably skip the whole actually making it look like sushi part and throw it all in a bowl and call it a poke bowl! I don’t have the skills Bobby and Autumn have.
- 10 ounces sushi grade sushi *tell your fish person you will be eating it raw
- 1 ripe avocado
- 1 cup quinoa
- Soy sauce, I used coconut amnios
- Nori, cut into strips (you can see where to cut on the nori)
- coconut sugar
- rice vinegar
- sea salt
Cook the quinoa. When finished cooking, mix in 1 tbs. coconut sugar, 1 tbs coconut aminos, 1 tbs. rice vinegar (heat mixture in microwave to melt the sugar before pouring it over the quinoa). Spread in a large glass pan, so it can cool. Put a towel over the pan to avoid crunchy quinoa.
Cut up tuna into small pieces. Pour over 1/2 tbs. of rice vinegar and sprinkle with sea salt.
Cut avocado into small pieces. Pour over 1 tsp of rice vinegar.
Have a small bowl of water on hand to wet your fingers so the quinoa will not stick to it, roll about a spoon full of quinoa in your hand and put it on a plate. Do this until all the quinoa is gone.
Take the cut nori and wrap it about the quinoa balls, making the ends slightly damp so they the two ends of the nori stick together. Do this until all the quinoa has nori around it.
Fill the quinoa and nori cups with tuna and avocado. Dip in soy sauce and enjoy!!
