Hello everyone! I hope your week has been going good so far! Sammy and I have had a super fun August, we are trying to end our summer with a bang. We have been visiting water parks, pools, beaches, water play areas, tons of fun in the sun. With all that playing we need some serious healthy eats to refuel.
This week, I am trying some new recipes inspired by the ladies in the Country Heat challenge group. They have been posting some killer recipes with mouth watering pictures, so I HAVE to try them out.
I have been seeing some fantastic results lately and I really want to keep up with the progress so all of the recipes are healthy and family friendly.
I try to stray away from the same old boring thing, but this is the only thing that keep me the fullest the longest:
Egg-whites mixed with 1 egg, scrambled with spinach and hot sauce paired with oatmeal and berries
For those of you that need a little more adventure in there breakfasts:
Fixate vegan muffins.
Carmel mocha shakeology.
As always, leftovers are my favorite, so that is mainly what I eat for lunch. I always have 1 protein and 1-2 vegetable. If I don’t have any leftovers on hand my go-to thing is ground turkey with veggies and avocado, topped with some Tessemea’s green goodness dressing…OMG so good. I add roasted sweet potato to that if I’m feeling fancy.
Here are some other options with will work too:
Crunchy veggie wraps.
Marinated veggies and chicken sausage.
Pizza bowl salad.
I love to sit down to a nice big dinner with my family. By big I mean TONS of veggies for everyone, with a good quality portion source, and healthy complex carbohydrates.
Chicken with feta and artichokes.

Butternut squash macaroni and cheese.

I need to do some sort of shrimp dish this week since my mini me is OBESSED with shrimp. I’m thinking either:
I LOVE Mexican food, I am always looking for new recipes to try. Since we have a lot of chicken on the menu this week I might have to substitute beef or pork for this recipe.
Buffalo Chicken with brown rice avocado and roasted zucchini
- 4 lbs boneless chicken breasts
2 cups redhot sauce (I used moores)
10 ounces plain Greek yogurt
Blue cheese crumbles
Cook chicken and 1 cup red sauce in crockpot on low 6 hours. Shred chicken. Add 1 cup red sauce and yogurt and stir. Serve over corn tortillas with blue cheese crumbles!
Slow roasted Salmon with asparagus and sweet potato, probably my favorite meal ever. If I could eat this every night I would.
