This month has been nuts! I came back from vacation, after being gone for 2 months, moved into a new house, and went back to work. We are still trying to unpack and organize so things are still little chaotic, but I am excited to start making healthy meals in my new house for my family again.
I have been really good at staying on track since I have been back. I have been eating by the containers and waking up super early to exercise since my days have been crazy. I feel good, but I am ready to share the experience with my family. Since we are in a new house we are starting new traditions: healthy meals for the whole family, ab tapes at nap time, walks in the evening after dinner.
Meal plan for this week (Dinner):
-Cesar Salad. A friend of mine posted this healthy cesar and it caught my eye. It looked so delish I had to try it, plus my hubby LOVES cesar : 3/4 cup evoo, 1/4 cup red wine vinegar, Juice from 1 lemon, 1 clove garlic pressed, 2-3 drops Worcestershire sauce, 1 tsp dijon mustard, fresh pepper, and a little of truffle oil. Add baby kale, romaine, grilled chicken, and homemade croutons made with sprouted grain bread.

-Marinated flank steak with roasted veggies
– Fish in packets with fresh veggies and herbs http://www.foodnetwork.com/recipes/italian-fish-and-veggie-pockets-recipe.html you an use any fish or veggies. I like to serve mine with rice.
-Leftovers as usual, I love my cook once eat….multiple times
-Ground turkey with sweet potato and Brussels sprouts
-Baked chicken and veggies with leftover rice
-oatmeal with berries and scrambled egg white and spinach
-Eggs with ezekiel bread and berries
-“French toast” with berries
-Shakeo with peanut butter, spinach, banana, and almond milk
-Hummus with veggies
-Apple with cheese sticks
