I am super excited for this week of meals, I get to share some of my favorite Fixate recipes with my Boston family! They have been dying to try the creamy Fixate Macaroni and Cheese, mainly my niece who is a macaroni and cheese connoisseur.
My mom is excited for the chicken stuffed peppers, which is my ultimate favorite in the whole cookbook! The presentation is awesome and it is full of flavor! My dad is just happy these meals won’t make him gain love handles!
For breakfast, lately I’ve been all about nonfat greek yogurt with blueberries, strawberries, ground chia seeds, and a low sugar granola. This week I will alternate between that and my norm of egg white and a bowl of oatmeal.
For lunches, I always use leftovers. It’s fast, easy, I don’t have to cook every single meal I eat, which can be a problem when your eating healthy, fresh, nutrient dense foods. I try to always have cooked chicken and cooked vegetables in the refrigerator at all times so I have a healthy option available.
