I am super excited for this weeks meal plan! I found a old Clean Eating magazine with some amazing healthy recipes I haven’t tried in years! I highly recommend purchasing the Clean Eating magazine series, they have creative entrees and snacks that appeals to everyone and as a bonus almost all of the recipes are 21 Day Fix friendly! Its great for when you need some inspiration!
Overnight oats with greek yogurt and berries
Oatmeal with berries and a side of egg whites
Yogurt with berries and granola
protein + vegetable=perfect lunch
Thai Mango Zucchini Noodle Salad
- 10 oz chicken breast
- 1 1/2 cups low-sodium chicken broth
- 1 clove of garlic, thinly sliced
- 1 1/2 tsp of ginger
- 1/2 avocado
- 2 1/2 cups mango, cubed
- 6 tbs. cilantro
- 2 tbs. lime juice
- 1 tsp soy sauce or coconut amnios
- 1/4 tsp sriracha
- 3 large zuchini, cut into noodles!
- 1 large carrot, cut into noodles!
- 1/4 cup raw cashews
In a small saucepan add broth, chicken, garlic, and ginger. bring to a boil over medium-high heat, reduce to a simmer, cook 8-10 minutes until no longer pink in the middle. Cool and transfer to a cutting board to shred.
Bring broth to a boil uncovered until liquid is reduced to 1/4 of a cup, about 6-8 minutes. Let cool
In a bleneder combinde, avocado, mango, cilantro, lime juice, soy or coconut anmois, and siracha, and broth. Blend until smooth and creamy. Add sauce to chicken and noodles, sprinkle with cashews
