This week is going to be crazy, we are moving and traveling within days of each other. My meals this week have to be super simple, at least for the first few days. Most of my kitchen tools are packed and I am trying to not buy too much stuff, since we need to empty the refrigerator.
Meals are going to be super clean and simple, I do not want to feel bloated in sluggish while one a plane with a crazy 2 year old (prayers please!).
-Oats with berries and egg whites
-Overnight oats with banana and berries
Mix 1 yellow of dry oats, 1 red of yogurt, 1 tsp chia seeds, 1 tsp maple syrup, cinnamon, 1/2 mashed banana, 1/4 cup almond milk. Let sit overnight, top with berries in the morning
Make a open faced egg white and veggie omelet (aka a frittata) start in a nonstick pan, finish in a preheated oven at 350. Put the eggs in a wrap and enjoy!
-Ground turkey with steamed broccoli and sweet potatoes, topped with balsamic dressing. I will make enough meals for 3 lunch’s. I travel on Wednesday, I will have all my clean lunches done until I leave.
Rotisserie chicken with roasted zucchini and summer squash over spinach with a lemon vinaigrette. I love to make my own salad dressing. I use a 1 part acid to 2 parts EVOO ratio, and a emulsifier to keep it all together. For example, for a lemon vinaigrette I would mix 1 part lemon juice, say 1 tablespoon, 1 tsp. emulsifier, such as dijon mustard, 1 tsp honey, salt/pepper, and 2 tbs. of EVOO, slowly mixed in. If you don’t care to make your own I LOVE Tessemae’s vinaigrette in the produce section of Whole Foods, they are all super clean and so good!
-Whatever left overs are in the refrigerator from previous dinners
-Dinner out! Date night with my hubby! I know I am going to have a glass of wine so no carbs for me at dinner!
-Slow roasted salmon with green beans and baby potatoes
-Flank steak marinated in balsamic, EVOO, and Montreal steak seasoning with roasted cauliflower (save some for me and Sammy mom! We will be starving by the time we get in)
Pan seared chicken breast with steamed broccoli, topped with lemon and EVOO, and roasted sweet potatoes with coconut oil and cinnamon
