I leave in 1 week to go to Florida! I am so stinking excited! I have been pushing myself really hard, doing extra workouts and eating super clean in order to be tight and toned for my bathing suit.
Last weeks meals were super simple: protein, vegetable, complex carb. This weeks menu will be little more fun, inspired by some lovely challengers and coaches in our challenge groups.
Veggie scramble with avocado toast
3 eggs + 1 egg with sautéed veggies (anything you have in the refrigerator will work)
1 piece sprouted grain bread topped with avocado and pink salt
Oats with berries and eggs with spinach
Oats cooked with water, topped with stevia, cinnamon, and vanilla extract. Add berries of choice
2 eggs, cooked with spinach, topped with hot sauce
Pumpkin Oats with egg whites
Oats with 1 tbs of pumpkin puree, topped with stevia, pumpkin pie spice, maple syrup, vanilla extract.
4 egg whites topped with green dragon hot sauce
Chicken with mixed greens and Fixate balsamic dressing

Turkey Lettuce Wrap
Big crunchy lettuce, cooked turkey burger, 1/2 piece cheddar cheese, pickled jalapeño, red onion, avocado, tomato. Side of cooked veggies.
Mexican Monday-Mexican Taco meat with zoodles (fixate cookbook)
- 1 tsp. Olive Oil
- 1 medium onion, chopped
- 1 medium, jalapeno, chopped
- 2 cloves of garlic, chopped
- 1 lb ground turkey
- 1 tsp chili powder
- 1 tsp oregano
- 1/2 tsp sea salt
- 1 cup no sugar added tomato sauce
- 1 chipotle in adobo
- 1 tbs sauce from chipotle in adobo
- Heat a skillet with oil over medium heat
- Add onion and jalapeño, stir, 4-5 minutes
- add garlic, cook for 1 minute, transfer the mixture to a bowl
- add turkey to the skillet, cook for 8-10 minutes
- season with chili powder, oregano, salt,
- add onion mixture, tomato sauce, chipotle chili +sauce. Mix well. Reduce heat to low, simmer for 8-10 minutes until thickened
